Chef's Profile
Chef Luis Herrera Thatcher was born in Mexico City and is the second generation of his family to choose a career in the restaurant trade. From a very young age he was exposed to an ambiance of service and gastronomy while helping out in the family restaurant on the oceanfront boardwalk in world famous Puerto Vallarta, it was there he decided that the placed he most liked to be was in the kitchen.
He started his professional career in Mexico City taking courses in a culinary program at the Iberoamericana University from 1994 through 1997. Upon graduation, he traveled to Hyde Park NY to continue his studies at the prestigious Culinary Institute of America taking courses to expand and amplify his culinary abilities.
After working for five years in New York City in renowned restaurants such as Lucien, one of the finest French Bistros in the City, and The Fire Bird, a Russian restaurant with a fine reputation for excellence, he moved to Los Cabos Mexico.
In Los Cabos he became the first Executive Chef of one of the most luxurious and exclusive destination projects on the Los Cabos Corridor, Club de Golf Querencia. After finishing work at Querencia, he became the Executive Chef of the brand new Club Ninety Six, the restaurant and private beach club of the beautiful Villas del Mar development. In both venues Chef Herrera created many private as well as club events for the many famous personalities who regularly visit Los Cabos.
Chef Herrera is always expanding his repertory, creating though experimenting is the way he creates the wonderful food that Restaurant H has to offer. Through a real passion, incurable curiosity, and by always looking for new forms of flavorful knowledge he keeps Restaurant H fresh and always motivated for some new culinary experience.
